Chicken-Tomato Skillet

If you are looking for a quick meal , this one is for you. It took less than 15 minutes to make, was cheap and everyone loved it.

Chicken-Tomato Skillet

2 cups pasta
1 pd chicken tenders, cubed
1 can cream of chicken soup
1 can diced tomatoes, undrained
1/2 cup milk
1 tbsp. basil ( you may want to go more or less depending on your taste)

Cook pasta and drain, Meanwhile cook chicken in skillet with a little oil for 4-6 minutes. Reduce heat to medium and add soup, tomatoes, milk and basil.
Stir in cooked pasta. Cook on low for 6-8 minutes, stirring occasionally.
Enjoy!

Sunday Chicken Dinner ( Crockpot)

I was going through my cookbooks the other day and came across this recipe. I had carrots and potatoes that I needed to use up and since it is a crockpot recipe it didn't heat up my house. If you are like me you don't want to turn your oven on for a couple of hours in the middle of summer. Luckily here in Indiana it hasn't been to bad so far but I think it is because we have had so much rain!

Sunday Chicken Supper

4 med. carrots, cut into 2 inch pieces
1 med. onion, chopped
1 celery rib, cut into 2 inch pieces
2 cups of green beans
3 potatoes, peeled and cut into chunks
4 boneless skinless chicken breasts
4 bacon strips, cooked and crumbled
1 1/2 cups of hot water
2 tsp chicken bouillon granules
1/2 tsp Italian seasoning
1/2 tsp basil
( I also added in fresh corn that I had cut off from us eating corn on the cob a previous night)

Layer first 7 ingredients ( and corn if you want). Mix remaining ingredients in a bowl. Pour over top. Cook on low 6-8 hours.

Warm BBQ Chicken Salad

If you have ever tried the Wildfire Chicken Salad from Bob Evans you are going to love this recipe.




Warm BBQ Chicken Salad

1 boneless skinless chicken breast, cooked and shredded
1/2 pkg bacon, cooked and crumbled
1/2 can corn, fry in skillet with bacon drippings
1 bag salad
2 tomatoes, chopped
1/4 of a small onion, chopped
1 cup shredded cheddar cheese
1 bottle bbq sauce

Combine 1/2 cup of BBQ sauce with chicken. Heat in the microwave. Toss together lettuce, tomatoes and onion. Divide on serving plates. Top with warm bacon, corn, chicken and then top with cheese. Mix 1/2 cup bbq sauce with water to thin it down. Drizzle over salad.

Pineapple BBQ Grilled Chicken

I made these the other night when it was just to hot to turn on the oven.  They turned out wonderful!


Pineapple BBQ Grilled Chicken

4 boneless skinless chicken breasts
4 pineapple slices
4 slices green pepper
4 tbsp bbq sauce

On a piece of foil center chicken breasts. Top with 1 tbsp bbq sauce, 1 pineapple slice and 1 green pepper slice. Fold into packet.
 Grill for 7-10 minutes or until chicken is done.

McCormicks Slow Cooker Italian Herb Chicken

I don't buy a lot of prepackaged seasonings, I think they are just to expensive. I got this on sale one day though and tried it and I fell in love. It is so simple to do and best of all it goes into the crockpot!




It takes
 one packet of seasoning
2 -2 1/2 pds of chicken
1 pkg mushrooms ( I didn't use these)
2 cans stewed tomatoes
1 can tomato paste

You mix it all up and cook in the crockpot all day. Serve over your choice and pasta.

Pineapple Teryaki Grilled Chicken

I am always looking for a good chicken recipe---we eat A LOT of chicken at my house so I was super excited with how well this one turned out. We grilled it out while we were camping but it would do great in the oven to....I am betting it could even be made in the crockpot. I really do love my crockpot lol.

Pineapple Teryaki Grilled Chicken
1 can (6oz) pineapple juice
1/4 cup vegetable oil
1/4 cup soy sauce
1/2 tsp garlic powder
1/4 tsp pepper
1/4 cup brown sugar
1 can pineapple slices (optional)
4 chicken breasts

In a med bowl mix pineapple juice, vegetable oil, soy sauce, brown sugar, garlic powder and pepper. Marniate chicken in this for 2-8 hours. Grill 5-7 min on each side. Place pineapple on grill and grill 1-2 minutes on each side.

Whatever Wednesday ( Slow Cooker Chicken Goulash)

I have been on the hunt for recipes that use diced tomatoes. I still have a freezer full of homemade diced tomatoes that I made last summer that I am trying to use up. I looked on pinterest and came across this recipe. It is called slow cooker chicken goulash and it turned out to be really yummy!
Here is the recipe for you!

Slow Cooker Chicken Goulash

2 lbs boneless, skinless chicken breasts

2 Tablespoons of olive oil

1 large yellow onion, sliced

1 sweet red bell pepper, chopped

1 jalapeno pepper, seeded and chopped finely

3 large cloves of garlic

1 Tablespoon of paprika

(1) 28 ounce can of crushed tomatoes (diced or stewed would work too)

1/4 cup of red wine vinegar

1 Tablespoon of brown sugar (light or dark should be fine, whatever you have on hand)

1 teaspoon of salt

1 teaspoon of ground black pepper

 
 In a medium sized skillet heat the olive over medium heat. Add the onions and saute until translucent and tender.
 


Add to crock pot. Now add the bell pepper, jalapeno pepper and garlic cloves to the pan. Cook until soft and tender. Add to crock pot.


Add the remaining ingredients to the crock pot and stir to slightly incorporate.

 

Cook on low for 5 - 6 hours or on high for 2.5 - 3 hours. Once the chicken breasts are cooked thoroughly remove them from the crock pot and shred them using two forks.

 

Return the shredded chicken to the crock pot and stir to mix  it in with the other ingredients. If you find that this is too runny for your liking, mix in a couple of tablespoons of tomato paste to thicken it up.

chicken and dumplings

Chicken and dumplings


I made chicken and dumplings for dinner the other night and I wanted to share how easy it is with everyone.
Ingredients
3 boneless chicken breast
5 chicken Bouillon cubes
Bisquick
Corn starch

I just took 3 frozen boneless chicken breast and put them in a pot with about  8 cups of water and 5 chicken Bouillon  cubes. Place on the stove and bring to a boil over medium heat.  Let the chicken boil till it is cooked all the way through. Then remove the chicken from the water and chop up fine.

Remove about 2 cups of chicken water.  Add chicken back to the rest of the water.  Then use the drop biscuit recipe on the Bisquick box to make dumplings using the water you got out of the pan for the liquid in the recipe.

 Then turn burner up to high and drop the dumplings by spoonful into the pan with the chicken . They will go all the way to the bottom but will rise back to the top as they cook.  The dumpling take only a couple of minutes to cook. If you are unsure if they are done simply scoop 1 out and try it.

My sauce was not very thick when the dumplings where done so I thickened it up by mixing 4 TBL of cornstarch and 1/4 cup of water together in a cup and stirring it in to the chicken and dumplings while burner was still on high the whole time.   This thickened it right up.

Everyone liked them even my next door neighbors who had some the next day because I had so much left over.  This would probably make a good freezer meal.

Tasty Tuesday ( Golden Baked Chicken)

I tried this recipe for the first time the other night. Everyone in my family seemed to enjoy it. It was easy to make and since it bakes for so long, it kept my house warm on a cold day!

Golden Baked Chicken

2 cups mashed potato flakes
3/4 cup grated parmesan cheese
2 tbsp parsley flakes
1 tbsp paprika ( I didn't have any so I left it out)
3/4 tsp garlic salt
3/4 tsp onion powder
1/2 tsp pepper
Chicken- I used boneless skinless chicken breasts but you can use whatever you want
1 cup butter, melted

In a bowl, combine potato flakes, parmesan cheese, parsley, paprika, garlic salt, onion powder and pepper
Dip chicken into butter, then into potato flake mixture. Place on a greased pan and bake at 375 for 50-60 min.

This serves 12 people. I am unsure where I got the recipe from. I had it written down on a index card

Thrifty Thursday ( Soy Garlic Chicken)

Kroger had chicken legs on sale last week for 88 cents a pound. I picked up a large pack and decided to make them for dinner last night. I didn't want to do my usual recipe of just adding barbecue sauce so I made up a marindae to use. I thought it tasted pretty good and even the girls ate it ( they are super picky so this means a lot lol)

First thing I did was cut the skin off all the chicken legs
Then I mixed up 1/2 cup of soy sauce, a couple tablespoons of minced garlic and about 6 tbsp of melted butter. I poured it on top of the chicken legs.
Bake at 350 for 1 hour. Eat and Enjoy!!

Whatever Wednesday ( Baked Ziti with Chicken in Queso Sauce)

Baked Ziti with Chicken in Queso Sauce

2 cups shredded cooked chicken
2 cans cream of chicken soup
1 can Rotel tomatoes
1 pd Velveeta, cubed
2 cups shredded cheddar cheese
1 box ziti noodles

Cook chicken and shred.

Cook pasta and drain.

 Melt velveeta in the microwave.

Mix soup, rotel and melted cheese.

Stir in remaining ingredients and pour into a 9x13 dish.


Bake at 35o for 45 minutes.

Slow Cooker Chicken Parmesan with Pasta ( and another giveaway!!)

I am always looking for a easy crockpot recipe. I use it several times a week and like to mix it up a little bit with what I make. Yesterday I made Chicken Parmesan and it was so yummy! Here is the recipe that I used.


Slow Cooker Chicken Parmesan with Pasta

1 egg ( I ended up using 3)
1/3 cup plain bread crumbs
1/3 cup Parmesan cheese
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
4 boneless skinless chicken breasts
1 jar spaghetti sauce
1/2 cup shredded mozarella cheese
cooked pasta

Spray slow cooker with cooking spray or use slow liner bag ( I love these things!!)
In a small shallow bowl, beat egg until foamy.
In another shallow bowl, mix bread crumbs, Parmesan cheese, italian seasoning, salt and pepper.
Dip chicken in egg, then coat evenly with bread crumb mixture.

Place chicken in slow cooker and top evenly with spaghetti sauce

Cover and cook on low 5 to 6 hours. Sprinkle mozzarella cheese over top and cook on low heat for 10 more minutes. Meanwhile cook pasta.


 Serve chicken with pasta.

Tasty Tuesday ( Slow Cooker Cheesy Chicken and Tortillas)

This meal is so easy to make and it is so good! You start off in the slow cooker and finish it in the oven.


Cheesy Chicken and Tortillas
 4 boneless skinless chicken breasts ( frozen is fine)
1 pkg taco seasoning
2 cans cream of chicken soup
2 tbsp butter
5 1/4 cups chicken stock ( I just use chicken broth)
10 flour tortillas, cut into bite sized pieces
4 cups shredded mexican style cheese

Place chicken in slow cooker and top with all but 2 tbsp of taco seasoning. Pour 3 1/2 cups of the chicken stock over the chicken. Cook on low 4-5 hrs.
Remove chicken and shred.
Heat oven to 350. Heat butter in 3qt saucepan.
Stir in remaining taco seasoning, stock and soup.
Once it is mixed well add chicken.
In a casserole dish layer half of chicken mixture, tortillas and 2 cups cheese..

Repeat layer.


Bake 30 minutes.
