Whatever Wednesday ( Slow Cooker Chicken Goulash)

I have been on the hunt for recipes that use diced tomatoes. I still have a freezer full of homemade diced tomatoes that I made last summer that I am trying to use up. I looked on pinterest and came across this recipe. It is called slow cooker chicken goulash and it turned out to be really yummy!
Here is the recipe for you!

Slow Cooker Chicken Goulash

2 lbs boneless, skinless chicken breasts

2 Tablespoons of olive oil

1 large yellow onion, sliced

1 sweet red bell pepper, chopped

1 jalapeno pepper, seeded and chopped finely

3 large cloves of garlic

1 Tablespoon of paprika

(1) 28 ounce can of crushed tomatoes (diced or stewed would work too)

1/4 cup of red wine vinegar

1 Tablespoon of brown sugar (light or dark should be fine, whatever you have on hand)

1 teaspoon of salt

1 teaspoon of ground black pepper

 
 In a medium sized skillet heat the olive over medium heat. Add the onions and saute until translucent and tender.
 


Add to crock pot. Now add the bell pepper, jalapeno pepper and garlic cloves to the pan. Cook until soft and tender. Add to crock pot.


Add the remaining ingredients to the crock pot and stir to slightly incorporate.

 

Cook on low for 5 - 6 hours or on high for 2.5 - 3 hours. Once the chicken breasts are cooked thoroughly remove them from the crock pot and shred them using two forks.

 

Return the shredded chicken to the crock pot and stir to mix  it in with the other ingredients. If you find that this is too runny for your liking, mix in a couple of tablespoons of tomato paste to thicken it up.

Whatever Wednesday ( Brownie Journey-Brownie Quest Session 2)

  • We are well underway with the Brownie Quest Journey at this point. I have a lot of things happen and didn't get this posted very quickly so I do apologize. This is how our meeting went:
  • The girls arrived and signed in. We had a a lot of girls absent at this meeting due to all the sickness going around.
  • We opened the meeting with the Pledge, Promise and  Law
  • For our first activity we talked about the Family Stars the girls had worked with their families on at home. We took a moment to pass them around the table so everyone got a chance to see.
  • For our second activity I had the girls guess what the name of the key that we just discovered was. It took them a little bit of time to guess it but good clues will help them a lot!
  • The girls then did page 52 in their books
  • For our third activity we played a game called All Aboard. This is a team building activity. What I did was bring in a large tablecloth . I put it in the middle of the floor and told the girls they had to stand on it. Once they were on I made them get off and folded it in half. We kept doing this until they no longer could figure out a way to get all of them on it. You can make up your own rules on how to do it ( such as they can't talk, etc). They had a great time doing this!
  • We went back to the table and talked about how this involved team work.
  • We created a Brownie Troop Agreement and then the girls did page 53 in their books
  • To end the meeting we talked about Healthy Living ( pg 62 in leader book) and talked about the pictures shown on pages 54 and 55 in the girls books.

Whatever Wednesday ( OTC meds and RLS)

When I was pregnant with my oldest daughter ( who is now 8) I would have horrible leg pain. I went through some tests and no one could ever figure out what was causing it. They ended up giving me a low dose of pain meds to help me make it through until I delivered her. They did help and I thought that once I gave birth the leg pain would go away. I was wrong. Shortly after she was born the pain came back. It was horrible. I couldn't sleep at night and the pain was something that was hard to explain. I went back in to see my doctor and she decided that she thought I had Restless Leg Syndrome ( RLS) It was still pretty new back then but I had heard of it and my symptoms fit it 100 %. She sent me on to a neurologist who confirmed it. There is no actual test to diagnose it but they listen to your symptoms and usually check your iron levels. I was told that people who have RLS have iron levels that are normal but on the low side of normal. The neurologist put me on a medicine called Requip. It was like a miracle drug. I was on it for many years until the pain came back. I went to a higher dose of the Requip but it made me so sick that I couldn't take it. There was a second medicine out there at that point called Mirapex. I started it and it worked just as well as the Requip and didn't make me sick. Now it is the beginning of the year and we have a deductible to meet before the insurance pays for my medicine. I decided to try a over the counter  medicine I saw at CVS to see if it would help take the edge off. It is made by Hylands and is called Restless Leg.
I was pleasantly surprised that it worked. You take 2-3 tablets and let them dissolve under your tongue. It doesn't take the pain away for me ( I was told that have a severe case of it) but it does help take the edge off. If anyone feels like they may have RLS this would be a good medicine to try!

Hey everyone
Happy Wednesday everyone.  So I promised to tell you guys what funny national day it was yesterday.  Okay it was First foot forward day.  I was not able to get any good pictures for today's day.  Because it was run it up a flag pole and see who salutes day. And I don't have a flag pole.  Sorry guys!

But take a look at my little Tinkerbell and son playing in the snow


she has really gotten big since I last posted pictures of her.

Whatever Wednesday ( Hot Chocolate Reindeer) and another giveaway!

I made up quite a few of these for the craft show that I did Saturday and I sold every one of them. I could have sold more if I would have had them.
They are really easy to make. First take a clear pastry bag and add as much hot chocolate as you would like ( I added 2 cups). Add some mini marshmallows on top and tie up the bag ( I just used brown yarn to tie it) Add a small red pom pom and some googly eyes and there you go. These would make cute gifts for teachers or assistants or anyone you just want a small gift for.

Whatever Wednesday ( Omelets)

Today my youngest daughter had a brunch at school and I had to take a breakfast food. I wanted to make something different so I decided to make mini omelets in muffin pans. They were simple to make and tasted great!

First brown 1 pd sausage

In a large bowl beat 18 eggs and add 2 cups of shredded cheddar cheese
Drain sausage and mix it with the eggs and cheese
Grease 2 muffin pans well and fill with egg mixture
Bake 20 minutes at 350.

Hey everyone Stephanie here I want to ask everyone to send their prayers and well wishes to Mindy's oldest daughter today.  She had to get her tonsils out today.  She is doing really good they are going to get to come home tonight because she is doing so well.  But I am sure she is going to be in some pain for a little while. So please keep her in your prayers

Whatever Wednesday ( Happy Halloween)

I hope that everyone has a safe Halloween. I know my kids are so excited to go out tonight. If only if wasn't so cold and windy here in Indiana.
Last Saturday I helped host a Halloween Party for Girl Scouts. Today I am posting pictures from it. Enjoy -Mindy

We did a bucket toss game.
They decorated pumpkin cookies with orange icing and candy corn.
We did another games where they picked a number and won tickets ( which they cashed inf or prizes later)
We did a Mystery Bucket.
and a craft. Pumpkin Picture Frames.
Of course we had to do a sucker tree but we used a pumpkin for it.
We set up a background to take pictures of everyone.
They turned out so cute.
After they played games they got to turn in their tickets for prizes.

Overall it went really well and I think all the girls had fun!
