Mango Salsa

I wrote about my daughter being a Girl Scout awhile back and how we did Thinking Day. This was the other recipe I made to go along with the U.S. Virgin Islands. It was a huge hit. I had so many ask for the recipoe that it was unreal! My 4 year old was eating it by the spoonfuls!


Mango Salsa
1 large ripe mango
1 med. red bell pepper, diced into small pieces
1 small onion, diced finely
1-2 tbsp lemon/lime juice
Salt to taste
Few springs of cilantro, chopped

Dice mango in small pieces, add to bowl. Now add the rest of the ingredients to the bowl with the mango. Toss well and cover with plastic wrap. Set in fridge for at least 30 min.
