Pea Salad
Pea Salad
Using a large bowl layer lettuce then a layer of chopped green onions. Repeat until the bow is 3/4 full. Using a tablespoon add 1 tbsp of miracle whip and then 1 tbsp of ranch dressing next to it. Do this until you cover the top layer of lettuce. Open a can of peas and drain. Pour on top of dressing mix. Layer shredded cheese on top of peas. On top of the cheese add fried crumbled bacon. Chill until cold. Mix well before serving.

Crockpot Pineapple Upside Down Cake
I was looking for something different to make and I had came across a recipe on pinterest to make a Pineapple Upside Down Cake in the crcokpot. I can honestly say I was a little leary but I wanted to try it. I changed the recipe around a little bit so this is what I came up.
Crockpot Pineapple Upside Down Cake
1 box yellow cake mix
3 eggs
1 1/3 cup pineapple juice
1/3 cup vegetable oil
1 can pineapple rings
1 cup brown sugar
1/2 cup butter, melted
1 can maraschino cherries
Spray your crockpot with non stick spray. Take 1 cup brown sugar and cover the bottom of the crockpot evenly. Add pineapple slices on top of that and put a cherry inside each pineapple slice. In a bowl, mix eggs, butter, oil, pineapple juice, and cake mix. Layer over pineapple. Bake on high about 2 hours. When it is done let the cake cool down and flip out onto a plate if desired. ( I sprayed mine pretty well and I only had a little piece stick.)

spring break
Hey everyone Stephanie Here
Sorry I have not been on here a lot lately I have been trying to do some organizing of my whole house. So need less to say I have been busy. But this week and next week are spring break here in day care. But the weather is so yucky and cold here so we will not get to go outside much so that means lots of indoor activities. I am going to be posting some of it on here in the next few days.
Some of the things I am going to try to get the kids to try this week are.
Newspaper fashion show
Pizza shop with foam food
Pet shop
Grocery Store
I will try to post pictures and direction if I can get the kids to participate.

Mango Salsa
I wrote about my daughter being a Girl Scout awhile back and how we did Thinking Day. This was the other recipe I made to go along with the U.S. Virgin Islands. It was a huge hit. I had so many ask for the recipoe that it was unreal! My 4 year old was eating it by the spoonfuls!
Dice mango in small pieces, add to bowl. Now add
the rest of the ingredients to the bowl with the mango. Toss well and cover
with plastic wrap. Set in fridge for at least 30 min.
Mango Salsa
1 large ripe
mango
1 med. red
bell pepper, diced into small pieces
1 small
onion, diced finely
1-2 tbsp
lemon/lime juice
Salt to
taste
Few springs
of cilantro, chopped

Easy Crockpot Beef Pot Roast
My husband brought home some meat from work the other day for me ( he is the meat manager at Kroger) and one of the things he got was a roast. I like roasts but I get tired of fixing them with carrots and potatoes. I decided to do something different with it and I am glad I did. It was wonderful!
Easy Crockpot Beef Pot Roast
1 pot roast, lean chuck, top round, 2 1/2 to 4 pound
1 can (15 ounces) diced stewed tomatoes ( I used the tomatoes I had made and froze this summer)
2 Beef Bouillion Cubes
Cover and cook on low for 9 to 11 hours, or until beef is tender.

Corn Casserole
I have my mother in law bring this dish to all of our holiday dinners. It is so good and easy to make. I hope you and your family enjoy!

1 can reg kernal corn
1 can CREAMED corn
1 box jiffy Corn Bread Mix
1 egg
some butter ( calls for 1 stick - we generally only take a walnut size scoop of soft butter and add)
opt. 8 ounces.sour cream
Bake 350 - 375 degrees. Depending on your oven.
Check at 45 minutes, usually takes one hour.

Whatever Wednesday ( Girl Scouts Brownie Quest Journey)
Last week my daughters brownie troop started their journey. We started off with the Brownie Quest. This is my first time doing it so I am learning as I go. When I went looking for ideas I really didn't find to many so I thought maybe if I blogged what we did it would help someone else.
We opened the meeting by doing the pledge, promise and the law. I then passed out the girls books and had them do page 49 in their books as I set up for the next activity.
The next activity we did were all about me posters. I gave each girl a piece of white posterboard and had them draw a picture of themselves in the middle. Around their pictures I had them write words that described them ( ex. friend, sister, girl scout, etc)
It was fun to see what they wrote about themselves! Next I had them pick 2 parts of the law that meant the most to them. I had these written out of little pieces of paper. After they picked 2 of them we taped them onto their posters ( which I forgot to take a picture of...oops)
We took a break and had snack after this. It was 2 of our girls birthdays so we sang Happy Birthday to them and gave them a card.
After snack was over we had one more activity to do. We made a wall hanging of the Girl Scout Law. This was harder for the girls since they don't know it well yet but I thought it was good since they were learning it as they did the project.
We finished the meeting up by talking about Responsibility. We gave them papers to make their Family Stars at home and told them to read the first chapter in their Brownie Quest book.
Overall the meeting went well.

Cucumber Soup
Here is a interesting soup for you. I made it for the Girl Scouts Thinking Day to represent Belgium. It even made the paper the next day!
Cucumber Soup
Cucumber Soup
6 unpeeled
and washed English cucumbers
6 onions
4 chicken
stock cubes
1 2/3 cup
milk
Salt/pepper
to taste
Sautee
coarsely chopped onions in butter/oil.
Coarsely chop the cucumbers (do not
peel) and add to onions. Salt/pepper to taste.
Add 9 cups water and the stock
cubes. Cook together until the cucumbers are soft.
Blend together until smooth.
Add milk and mix well.

Super easy and cheap craft show display
So Scott and I where shopping the other day and he got the crackers he wanted to try well when I opened the box I was left with this. My first thought was it would make A GREAT DISPLAY BOX. Not really great for jewelry but for something. Then I thought about Mindy and some of the stuff she sells at craft shows would be great in this.
So I got out the old stand by Mod podge and some paper and in less than ten minutes I had something that I think she will like.
Here is what I did first I put to pieces of paper together blank sides facing each other
then I just free hand cut it with scissors leaving a little space around the box.
I then cut the pieces for the back and front. Like so.
I then started mod podgeing starting with the back then the sides and last the front.
I didn't do the insides right now the box can fold up for easy storage. Mindy can decided if she want to do the inside of the box.

sorry the mod podge is still wet but I wanted to get this up today.
