I have been very busy working on my daughters Bridging Ceremony for Girl Scouts so I missed posting Friday. Her ceremony was yesterday and it went wonderful.

late trifty thursday

Tasty Tuesday ( Chicken and Pasta)
Chicken and pasta
2-4 boneless skinless chicken breasts
1 bottle Italian salad dressing
1 envelope Italian salad dressing mix
1 box penne pasta
Marinate chicken in 1 cup salad dressing 15 min. Pour remaining cup in
bowl and add dry salad dressing mix to it. Boil pasta, drain. Remove
chicken from marinade and cook. Cut into bite sized pieces. Mix all
together.
Can add:
broccoli
cherry tomatoes

Make It Monday ( Candy Pencils)
Here is a cute idea for Teacher Appreciation Week.
Cut a piece of yellow paper and use scalloped scissors to cut the edge .
Line up 4 rolos on the paper ( make sure the paper is wide enough to roll the rolos around)
Add a hershey kiss at the end. Tape all of them together.
At the very top add a small piece of pink paper for the eraser. You may need to add another rolo.
Add a small piece of foil around the top and your done!

BBQ Pork and Penne Skillet
I can't believe tomorrow is Christmas Eve! It seems that this month has went by so quick! I hope you enjoy these special days with your family. Remember Christmas is more than food and gifts. The most important part is to spend time with your loved ones. I know for a fact my kids are growing up way to quick and I want to cherish every moment I have left with them!
I have one last recipe to share with you. I made this the last night for my mom's birthday. I hope you enjoy it as much as she did!
Barbecues Pork and Penne Skillet
1 package (16 ounces) penne pasta
1 cup chopped sweet red pepper
3/4 cup chopped onion1 tablespoon butter
1 tablespoon Olive Oil
3 garlic cloves, minced
1 carton (18 ounces) refrigerated fully cooked barbecued shredded pork ( I make my own)
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1/2 cup beef broth
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
1-1/4 cups shredded cheddar cheese
1/4 cup chopped green onions
Directions
Cook
pasta according to package directions. Meanwhile, in a large skillet,
saute red pepper and onion in butter and oil until tender. Add garlic;
saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper
and salt; heat through.
Drain pasta. Add pasta and cheese to pork
mixture. Sprinkle with green onions. Yield: 8 servings.

new member of the family
I am so very happy to introduce everyone to the news member of our family. Her name is Tinkerbell Autum Meadows Tink for short. She is 8 week old Boxer Lab mix. She is a rescue puppy from 2nd chance rescue in Greenwood IN. She has a great personality and is very loving. She is already a lap dog which is great right now don't know how good it will be when she is 50 to 80 lbs.
She is an early mothers day present from my Loving Husband Scott. We just got her last night and already she is really attached to me. She cries if she wakes up and I am not there.
I think we are going to be really luck with her and potty training she cries when she needs to go out. And I think she is going to be great for Mindy's 2 girls who are both afraid of dog. They meet her tonight and both of them ended up petting her. So maybe them watching her grow up will help them get over there fear of dogs.
I know that she is just what I needed to help me get through this first Mother's day with out Nick.

Tasty Tuesday ( Parmesan Chicken with Bow Ties
Parmessan Chicken with bow Ties
12 oz bow tie pasta
salt/pepper
2 cups small broccoil florets
2 tbsp olive oil
1 1/2 pds boneless chicken breasts cut into small pieces
1 onion, finely diced
2 cloves garlic, minced
1 can petite diced tomatoes ( I used 2)
1/2 cup grated parmesan
Cook pasta in boiling water, add broccoli ,3 minutes before pasta is
done. Drain, reserving 1 cup of cooking liquid. Toss pasta and broccoli
with 1 tbsp oil. Warm remaining oil in skillet over med-high heat. Add
chicken, garlic and onion, sprinkle with salt and pepper, saute for 5
min. Add tomatoes, saute for 2 more min. Toss in pasta, broccoli, cheese
and 1/2 cup cooking liquid. Add more liquid if dry.
