12 oz bow tie pasta salt/pepper 2 cups small broccoil florets 2 tbsp olive oil 1 1/2 pds boneless chicken breasts cut into small pieces 1 onion, finely diced 2 cloves garlic, minced 1 can petite diced tomatoes ( I used 2) 1/2 cup grated parmesan
Cook pasta in boiling water, add broccoli ,3 minutes before pasta is
done. Drain, reserving 1 cup of cooking liquid. Toss pasta and broccoli
with 1 tbsp oil. Warm remaining oil in skillet over med-high heat. Add
chicken, garlic and onion, sprinkle with salt and pepper, saute for 5
min. Add tomatoes, saute for 2 more min. Toss in pasta, broccoli, cheese
and 1/2 cup cooking liquid. Add more liquid if dry.
