Freezer Friday ( Meatloaf with String Cheese)

This recipe is so easy!! I am not going to post a meatloaf recipe because everyone does it their own way. All you need to do is make up a batch of meatlaof. Spray a muffin pan well and put meatloaf in each tin.
In the middle of each meatloaf add a small piece of string cheese and then cover with meatloaf.

Bake at 350 for about 30 minutes.
It was really good and my kids even ate it. I didn't get a chance to take a picture afterwards because someone showed up at my door but I think you would really enjoy it.

Thrifty Thursday ( Zucchini Bites) A Day late

Zucchini Bites

1 cups zucchini, grated
1 egg
1/4 yellow onion, diced
1/4 cup cheese (cheddar or Parmesan work the best)
1/4 cup bread crumbs - I used Italian style
Salt and Pepper

1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.

Makes 12 muffins

Sorry it is so late. My computer has been acting up . These were really good. My 4 year old loved them!

what ever Wednesday chocolate pie in a jar

Hey everyone I have been seeing lots of ideas out there on blog land for food in a mason jar.  So I decided to give it a try.

My husband really likes chocolate pie the only problem is that he only wants maybe one piece then he is done for a few days.  Which means one of 2 things happens either the pie goes bad or I eat the rest of it.   Neither is a good thing.  So I decided to make chocolate pies in small mason jars.   Sorry I didn't take pictures as I made it but is is so simply you really don't need them.

Here is what you need
cool whip I use fat free
instant sugar free fat free choc pie pudding mix
graham crackers.
Skim Milk

Take one of the packages for graham crackers out of the box and crush them.  Mine usually have 3 sealed packs in side the box.  Then place the crushed graham crackers in the bottom of your mason jar.  I know there is usually butter in a graham cracker crust but I chose not to add it because I didn't want the extra fat and calories.
Use the skim milk to make the chocolate pie filling according to the package directions. Layer the pie filling on top of the graham crackers.
Then add a small layer of cool whip on top place the lid and rings on the mason jar and refrigerate.
When ready to eat just open the jar and dig in.
Hope you try this soon it was really good and not very bad for you.

Smothered Sirloin Steak in Parmesan Peppercorn Sauce

I found this recipe on pinterest here is the original pin http://pinterest.com/pin/58757970108449508/
so go check it out
I changed the recipe a little bit here is how I made it
What You Need
1/2 cup Light Zesty Italian Dressing, divided
1 boneless beef sirloin steak (1 lb.), well trimmed
1/3 cup  Low Fat Sour Cream
4-1/2 tsp.  Grated Parmesan Cheese
1 tsp. black pepper
1 onion, thinly sliced, separated into rings
Make It
POUR 1/4 cup dressing over steak in shallow dish; turn to evenly coat steak. Refrigerate 30 min. to marinate. Meanwhile, mix sour cream, 2 Tbsp. of the remaining dressing, Parmesan cheese and pepper. Refrigerate until ready to serve.
HEAT remaining 2 Tbsp. dressing in large nonstick skillet on medium heat. Add onions; cook 7 to 8 min. or until golden brown, stirring frequently. Remove onions from skillet; set aside.
REMOVE steak from marinade; discard marinade. Add steak to skillet; cook on medium heat 5 to6 min. on each side or until well done. Remove steak from skillet; cut into thin strips. Serve topped with the sour cream sauce and onions.
the original recipe calls to cook it till medium but I can not stand for my steak to be even pink in the middle so mine says cook till well done about 170 on a meat thermometer.

Freezer Friday ( Diced Tomatoes)

If you planted a garden by now you may be looking for something to do with all of those tomatoes that have turned red. We use a lot of diced tomatoes in out house so I thought to myself why don't I make some to freeze. I am glad I did! They turned out great and they taste wonderful. The best part is the took no time at all to prepare.
First you need tomatoes. I had 7 of them.
Get a big pot and boil some water.
After the water is boiling add your tomatoes. Boil for 2 minutes.

Take tomatoes out and put in a big bowl of ice water.

Leave tomatoes in the ice water for 1 minute. Take them out and peel the skin off.
Dice your tomatoes up. I got about 3 cups from the 7 tomatoes I cut up.
Dump your tomatoes in a small crockpot. Then add a chopped green pepper ,Italian seasoning, onion flakes, and 2 bay leaves. I didn't measure the Italian Seasoning and onion flakes, I just dumped a good amount it in.
Cook on high for 5 hours. Remove bay leaf. I ended up getting about 2 cups of diced tomatoes from this.

So easy and so tasty!!
