freezer friday breakfast burritos

Hello everyone today is freezer Friday and we are making breakfast burritos.
These are so simple to make and a great breakfast for my husband and son to take for breakfast in the morning.

This is what you need :

about 16 flour tortillas
1 lb sausage
1 dozen eggs
2 cups of cheese
This recipe made about 16 burritos.    
Brown sausage and drain set aside.  Scramble eggs.  Add sausage and cheese to  scrambled eggs.
  Place about half a cup of the egg mixture on a tortilla.  You can add more or less but this amount seemed to work best for me.


Then fold up the sides of them.  Next fold the ends over.  Like this

I next placed them folded side down on a backing sheet
Then place the backing pans in the burritos in the freezer for a couple of hours.   Then place your burritos in freezer bags or like I did in vacuum seal bags.


Then you can take them out of the freezer and heat in the microwave for a minute or two till warm.  Eat and enjoy.

thrifty thursday

Hey everyone for the next few months we are going to be talking about our gardens on Thursday. 
We will be posting pictures as our plants start to grow and hopefully we will be able to post pictures of the great harvest we will be getting.  I have a lot of tomato plants started right now because I love to freeze tomatoes to use all winter long in chili and soups.
I also have summer squash which was growing great in the cup in the house but I think it has died since I put it in the garden.  So I will have to go buy some plants once we get back form seeing our family this weekend.
I have some strawberry plants that are doing well.  And a cucumber plant I think will make it.  I am going to plant some carrots, radishes, lettuce and green onions today or tomorrow.  I will post some pictures as soon as I get them loaded on to my computer.

I planted tomatoes, cucumbers, green peppers, watermelon, cantaloupe, zucchini and a blueberry bush. This is my first year of planting an actual garden, usually I just do tomato plants so I am really excited! I can't wait to see how everything grows.

Hello Everyone Stephanie Here.
Today's post is a little bit different than usual.  I have been talking to Mindy about setting some goals for my self for June.  And I decided that if I posted them on here I would be more likely to accomplish them.  This way I will be accountable to someone.

My first goal in June is to make something at least 3 days a week.  This can be jewelery or other crafts to sale in a craft show or on Etsy.

My second goal is to try at least one new recipe form the ones I have pinned on my pinterest boards.

My third goal is to exercise at least 10 minutes a day.  Yes I know that is not very long but it is more than I am doing now and we all have to start somewhere.

So I am going to post updates on here to keep my self on track and motivated.

Tasty Tuesday ( Hawaiian Pineapple Banana Bread)

Hawaiian Pineapple Banana Bread

3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1 cup chopped macadamia nutsF
3 eggs, beaten
1 cup vegetable oil
2 cups mashed ripe bananas (about 5)
2 teaspoons vanilla extract
1 (8-ounce) can crushed pineapple, drained, with 4 teaspoons liquid reserved
1/2 cup confectioners' sugar

Preheat oven to 350 degrees F. Coat two 8- x 4-inch loaf pans with cooking spray, then dust with flour.
In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt; stir in macadamia nuts. In a separate bowl, combine remaining ingredients; mix well. Pour wet mixture into dry mixture, stirring just until dry ingredients are moistened. Spoon batter into prepared loaf pans.
Bake 1-1/4 to 1-1/2 hours, or until a wooden toothpick inserted in center of loaf comes out clean. Cool in pans 10 minutes; remove from pans and let cool on wire racks.
In a small bowl, combine confectioners' sugar and reserved pineapple liquid. Drizzle over cooled breads.
 
 This bread was so good! It would be great even without the glaze.

Make It Monday ( Menu planner)

This is a very simple craft to make and would make a great gift for anyone who likes to cook! All you need is a picture frame ( I used a 8x10) a piece of scrapbook paper and cut out letters or stickers. Cut the scrapbook down to fit the picture frame. Decorate however you would like. To make it even more special add a adry erase marker to it and wrap it up pretty.

Tasty Tuesday ( Cheesy Crockpot Chicken and Vegetables)

Cheesy Crockpot Chicken and Vegetables

1/3 cup diced canadian bacon
2-3 carrots, peeled and sliced
2-3 celery ribs, chopped
1 small onion, chopped
1 can green beans, drained
1/4 cup water
Layer in crockpot in order given
2-3 pds chicken, cut up. Put on top of veggies, largest pieces first
2 tsp chicken bouillon granules
1 tbsp chopped fresh parlsey
3/4 tsp poultry seasoning
Mix together and sprinkle over chicken pieces
1 can condensed cheddar cheese soup
1 tbsp flour
1/4 cup parmesan cheese
Mix together and drop on top of chicken. Do Not Stir. Cook on hugh 3-4 hours or low 6-8 hrs.

Tasty Tuesday ( Chicken and Pasta)

Chicken and pasta
2-4 boneless skinless chicken breasts
1 bottle Italian salad dressing
1 envelope Italian salad dressing mix
1 box penne pasta

Marinate chicken in 1 cup salad dressing 15 min. Pour remaining cup in bowl and add dry salad dressing mix to it. Boil pasta, drain. Remove chicken from marinade and cook. Cut into bite sized pieces. Mix all together.
Can add:
broccoli
cherry tomatoes

Make It Monday ( Candy Pencils)

Here is a cute idea for Teacher Appreciation Week.




Cut a piece of yellow paper and use scalloped scissors to cut the edge .
Line up 4 rolos on the paper ( make sure the paper is wide enough to roll the rolos around)
Add a  hershey kiss at the end. Tape all of them together.
At the very top add a small piece of pink paper for the eraser. You may need to add another rolo.
Add a small piece of foil around the top and your done!

BBQ Pork and Penne Skillet

I can't believe tomorrow is Christmas Eve! It seems that this month has went by so quick! I hope you enjoy these special days with your family. Remember Christmas is more than food and gifts. The most important part is to spend time with your loved ones. I know for a fact my kids are growing up way to quick and I want to cherish every moment I have left with them!
I have one last recipe to share with you. I made this the last night for my mom's birthday. I hope you enjoy it as much as she did!
 
Barbecues Pork and Penne Skillet

1 package (16 ounces) penne pasta
1 cup chopped sweet red pepper
3/4 cup chopped onion
1 tablespoon butter
1 tablespoon Olive Oil
3 garlic cloves, minced
1 carton (18 ounces) refrigerated fully cooked barbecued shredded pork ( I make my own)
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1/2 cup beef broth
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
1-1/4 cups shredded cheddar cheese
1/4 cup chopped green onions

Directions

Cook pasta according to package directions. Meanwhile, in a large skillet, saute red pepper and onion in butter and oil until tender. Add garlic; saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper and salt; heat through.
Drain pasta. Add pasta and cheese to pork mixture. Sprinkle with green onions. Yield: 8 servings.

new member of the family

I am so very happy to introduce everyone to the news member of our family.  Her name is Tinkerbell Autum Meadows  Tink for short.   She is 8 week old Boxer Lab mix. She is a rescue puppy from 2nd chance rescue in Greenwood IN.  She has a great personality and is very loving.   She is already a lap dog which is great right now don't know how good it will be when she is 50 to 80 lbs.

She is an early mothers day present from my Loving Husband Scott.  We just got her last night and already she is really attached to me. She cries if she wakes up and I am not there.  

I think we are going to be really luck with her and potty training she cries when she needs to go out.  And I think she is going to be great for Mindy's 2 girls who are both afraid of dog.  They meet her tonight and both of them ended up petting her.  So maybe them watching her grow up will help them get over there fear of dogs.  

I know that she is just what I needed to help me get through this first Mother's day with out Nick.

Tasty Tuesday ( Parmesan Chicken with Bow Ties

Parmessan Chicken with bow Ties

12 oz bow tie pasta
salt/pepper
2 cups small broccoil florets
2 tbsp olive oil
1 1/2 pds boneless chicken breasts cut into small pieces
1 onion, finely diced
2 cloves garlic, minced
1 can petite diced tomatoes ( I used 2)
1/2 cup grated parmesan

Cook pasta in boiling water, add broccoli ,3 minutes before pasta is done. Drain, reserving 1 cup of cooking liquid. Toss pasta and broccoli with 1 tbsp oil. Warm remaining oil in skillet over med-high heat. Add chicken, garlic and onion, sprinkle with salt and pepper, saute for 5 min. Add tomatoes, saute for 2 more min. Toss in pasta, broccoli, cheese and 1/2 cup cooking liquid. Add more liquid if dry.
