Terayki Pork

If you haven't noticed I have been a mood to try some new recipes! That can be a good or bad thing, but luckily it has been good so far. Luckily everything has turned out and we have all liked it. Today I made a new recipe called Terayki Pork. It has been cooking in the crockpot all day and my house smells wonderful. It is simple to make but does take quite awhile to cook so make suer you get it on early in the morning.

Terayki Pork

  • Put a 4 pound pork roast in the crockpot.
  • Mix 1 cup soy sauce, 1 cup pineapple juice and 2 cups sugar in a small saucepan. Heat until it makes a smooth sauce.
  • Pour over pork
  • Sprinkle top of pork with minced garlic.
  • Cook all day on low

It is so tender when you take it out it just falls apart.

Freezer Friday (Blueberry Muffins)

I am trying to use up items out of my freezer. I came across a bag of frozen blueberries Stephanie gave me before she moved so I decided to whip up a batch of blueberry muffins. They are great for breakfast now that the girls are out of school for the summer. These could be made and frozen also.
Blueberry Muffins

2 cups flour
3/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 stick butter, melted
1/2 cup milk
2 large eggs, beaten
1/2 tsp vanilla
1 1/2 cups fresh blueberries ( or you can use frozen)

Preheat oven to 350. Place paper liners in muffin tin. Sift flour with the sugar, baking powder, salt and cinnamon into a large bowl. Make a well in the center of flour mixture and add the melted butter, milk, eggs and vanilla. Stir just enough to moisten flour mixture. Gently fold in blueberries.
Spoon batter into muffin tin. Bake 25-30 minutes.

Steak Marinade

I have to say that I am a lucky girl when it comes to eating steak. My wonderful Father-In-Law sends us Omaha Steaks for my birthday and they super yummy. If you have never tried them before you really need to. Not only to do they have steak, they also have chicken, pork chops, fish, hamburgers, sides and some of the best cheesecake you will ever eat. My mouth waters just thinking about that cheesecake.........back to the steak though. We took steak with us when we went camping and I tried a new marinade recipe for them. My husband who doesn't say much either way when it comes to food ( he just likes me to feed him) even said how awesome these were. The longer you let them marinate the better and more tender they are going to be.

Steak Maranide

4 tbsp olive oil
salt
pepper
garlic powder
2/3 cup terayike sauce
2 tsp soy sauce
liquid smoke
4 tbsp worcestershire sauce

Sprinkle salt, pepper and garlic powder on one side of steak. Pour 1/2 tsp oil on each side and knead spices/oil into steak. Repeat on other side. Add remaining ingredients, marinate at least 30 minutes before cooking or grilling.

Pineapple Teryaki Grilled Chicken

I am always looking for a good chicken recipe---we eat A LOT of chicken at my house so I was super excited with how well this one turned out. We grilled it out while we were camping but it would do great in the oven to....I am betting it could even be made in the crockpot. I really do love my crockpot lol.

Pineapple Teryaki Grilled Chicken
1 can (6oz) pineapple juice
1/4 cup vegetable oil
1/4 cup soy sauce
1/2 tsp garlic powder
1/4 tsp pepper
1/4 cup brown sugar
1 can pineapple slices (optional)
4 chicken breasts

In a med bowl mix pineapple juice, vegetable oil, soy sauce, brown sugar, garlic powder and pepper. Marniate chicken in this for 2-8 hours. Grill 5-7 min on each side. Place pineapple on grill and grill 1-2 minutes on each side.

Tasty Tuesday ( Sausage and Vegetables)

Today I wanted to share with you another recipe we fixed while we were camping. It was easy and cheap and since all you had to do was basically warm everything up it was quick to make. This could be easily adapted to a crockpot or oven also.

Sausage and Veggies
1 pkg, smoked sausage
1 lg onion, chopped
1 can corn
1 can green beans
1 tsp seasoning salt
1/2 tsp garlic powder
2 tbsp butter

Mix all ingredients together  and place in foil pan over grill. Cook until heated through.

Make-It-Monday (Fruit and Smore Cones)

Last week my family rented a cabin at a state park about 2 hours from our home. We have did this numerous times now and I like it because we can cook all of our meals at the cabin and it saves us a lot of money! Before we went I started looking on pinterest for some different recipes and I came across this one for a dessert. It looked so yummy and since it was different than the usual smores I wrote it down on my list. I am sure glad I did because my girls loved them!

Fruit and Smore Cones

strawberries
bananas
mini marshmallows
chocolate chips
waffle cones

First you take your waffle cone and fill it with the ingredients listed above.
Next wrap your cone in foil and place on grill.
Cook over charcol for 5-7 minutes. Make sure you turn the cones often or they will burn ( we found this out the hard way!)
Unwrap your cones and enjoy!
