make it monday and tasty tuesday combined.

Hey everyone I was going to post this recipe for make it Monday because I made it up.  But I wanted the picture to go with it and my DH did not tell me how to get it from my new phone( his old phone) to my computer till late last night so I am dong make it Monday and tasty Tuesday.  So you will get 2 recipes today.

  Sausage, egg, hash brown breakfast skillet

this is really simple to make you will need
1 lb. sausage
6 eggs beaten
6 hash browns I used the frozen ones
1 onion
1 cup cheddar cheese
brown the sausage and onions in a skillet.  Once they are fully cooked remove from skillet and set aside in a paper towel lined bowl.  Next cook has browns in the same skillet.  Remove from skillet and set aside.  Then Scramble eggs in the same skillet.  When Eggs are done add hash browns and sausage back to pan and add cheddar cheese.  heat until cheese is melted.  Now you are ready eat.

 
Honey Pecan Pork Chops:
1 1/4 pounds boneless pork loin, pounded thin
1/2 cup all-purpose flour for coating
salt and pepper to taste
2 tablespoons butter
1/4 cup honey
1/4 cup chopped pecans

Directions
1. In a shallow dish, mix together flour, salt and pepper. Dredge pork cutlets in the flour mixture.
2. In a large skillet, melt butter over medium-high heat. Add chops, and brown both sides. Transfer to a warm plate.
3. Mix honey and pecans into the pan drippings. Heat through, stirring constantly. Pour sauce over cutlets
Serve with fresh baked sweet potatoes and buttered broccoli.

Freezer Friday ( Stuffed Pepper Casserole)

Stuffed Pepper Casserole

2 medium green peppers cut into 1 inch chunks
2 pouches of Uncle Ben’s Ready Rice-whole grain brown
30 oz can of tomato sauce       2 tsp Worcesterchire sauce
2 ½ tsp dried basil                    ¼ cup dried onions
1 pd ground beef                      1 cup shredded cheddar cheese
1/8 tsp salt                                 1/8 tsp pepper
                 2 large Roma tomatoes-diced
Preheat oven to 350. Brown the ground beef with onion. Drain. Boil pepper chunks for 2 minutes. Remove from water and place on paper towels to remove excess water. Combine all but cheese in a 9x12 glass baking dish. Cover and bake 25 minutes. Remove and sprinkle with cheese. Return to oven. Bake uncovered for 7-10 minutes or until cheese is melted.

Thifty Thursday ( A day late!)

 I finally called the pharmacy yesterday to see how much this new prescription was going to cost me for my back.  When I was told the price I about fell out of my seat lol. I knew that I couldn't afford that every month ( not even for a few months until I can see if it will even help or not) Luckily I am cheap and found a coupon for a free months worth of medicine. Then I found a discount card...something is better than nothing. It just goes to show that if you do research you can save money places besides on just food =)

Whatever Wednesday

I just wanted to take another chance to apologize for the lack of blogging lately. As I mentioned yesterday I have not been feeling good and neither has Stephanie. While Stephanie has been batteling chronic sinus infections I have been having a lot of chest pain. This has been going on since June and although I have been through many tests no one had found the answer. It wasn't until a couple of weeks ago that they decided to do some x-rays of my neck and spine. Sure enough it gave them a clue and they ordered for me to have a MRI. Now I am the first to admit that I am a baby when it comes to those and I have a panic attack just thinking about being trapped inside this tube. After talking to my doctor they decided that I could have a new MRI called an upright MRI done. I had that done last Friday. Today I went to my doctor and found out I have 2 herniated disks, one if which is pinching a nerve, and my back is full of arthritis. I am being sent out to see a spine doctor and was given some meds to help with the arthritis. Tomorrow I have to go have a ton of bloodwork done to check out the arthritis part. It hurts me to sit or lay down for more than a couple of minutes which is why it is hard to get on here and blog. Not sure what the spine doctor will do for sure but surgery is looking very likely. If that happens I will be down some but please stick with us as we both try to get back on track.

Tasty Tuesday ( Chicken and Corn Soup)

First I want to say that we are sorry that we have not posted much lately. Both Stephanie and I have not been feeling well and that has put us both behind schedule. I promise we will get better about posting daily very soon. In the meantime I made a new soup last night and it turned out really well. I thought I would share the recipe with you for Tasty Tuesday.. Chicken and Corn Soup

3 boneless skinless chicken breasts, cubed
1 white onion, chopped
3 red potatoes, diced small
2 cloves garlic, minced
2 carrots, peeled and sliced thin
1 tsp. dried basil
1/2 cup tomato sauce
1 can corn
1 can cream style corn
3 cups chicken broth
parsley
pepper

Dump in crockpot and cook on low for 7 hours.

Tasty Tuesday ( Pizza Spaghetti)

Pizza Spaghetti

Cook 1 ( 16 oz) package of spaghetti according to package directions. Drain
Stir in one jar of your favorite spaghetti sauce into drained spaghetti. Pour innto a greased 9x13 pan, Top with all your favorite pizza toppings. Cover with 2 cups shredded pizza cheese. bake for 30 minutes at 350 degrees.

Suggested Toppings:
ground beef
sausage
pepperoni
mushrooms
green peppers
onions
olives
italian seasonings
parmesan cheese

make it monday diy car roads for toddlers

Today I am going to show you how I made streets for my daycare children to play with. These started out as empty mountain dew and Pepsi cases.  I simply cut the boxes in rectangles large enough for 2 hot wheel cars to fit on it.   Then I added dashes down the middle.  So simple and easy.  I also made one to be a crossroads
The kids really enjoyed playing with these.

recipes using girls scout cookies

Well as promised I have been searching the web for recipes using girl scout cookies.  Today we are going to start with a pie recipe I found on the taste of home web sight.  Sound easy and yummy.



Grasshopper Pie Recipe
  • Prep: 15 min. + freezing
  • Yield: 8 Servings
Ingredients
  • 2 packages (3 ounces each) cream cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 15 drops green food coloring
  • 24 chocolate-covered mint cookies{thin mints}, divided
  • 2 cups whipped topping
  • 1 chocolate crumb crust (9 inches)
Directions
  • In a large bowl, beat the cream cheese until fluffy. Gradually beat in milk until smooth. Beat in the food coloring. Coarsely crush 16 cookies; stir into the cream cheese mixture. Fold in whipped topping. Spoon into the crust. Cover and freeze overnight. Remove from the freezer 15 minutes before serving. Garnish with remaining cookies. Yield: 8 servings.
Nutritional Facts 1 serving (1 piece) equals 357 calories, 16 g fat (11 g saturated fat), 29 mg cholesterol, 151 mg sodium, 46 g carbohydrate, 1 g fiber, 6 g protein.

Whatever Wednesday

Hey everyone Stephanie here.  Take a look at what Mindy front room looked like a few weekends ago.



Mindy is the cookie mom for her daughters daisy troop.  So she has a house full of cookies.  Well seeing all these cookies got me thinking I bet there are some great recipes out there using girls scout cookies.
  So for the next week or two I am going to be search the web for recipes that use girl scout cookies and post links here.

Tasty Tuesday ( Sloppy Joe Potato Tot Casserole)

Sloppy Joe Potato Tot Casserole
1 pd ground beef                  2 cups chopped onion
1 (16 oz) bag frozen corn     1 can Sloppy Joe Mix
2 cups shredded cheddar cheese, divided
1 (28 oz) bag of frozen tater tots

Preheat oven to 350. In med skillet, combine ground beef and onions. Cook 8 minutes and drain well. In a large bowl, combine beef mixture, corn, sloppy joe mix and 1 1/4 cups cheese. Pour mixture into a 2 1/2 qt baking dish, top evenly with tater tots and remaining cheese. Bake 40-45 min
